THE HEALTH FAIRY

Serves 2

2 wholewheat muffins

2 medium eggs

Handful of baby spinach

25g grated low fat cheddar

180g  lean turkey mince

1 garlic clove minced

1 heaped tsp oregano

In a bowl squish together the mince, garlic and oregano, season and divide into 2 and flatten out each one slightly larger than the size of your muffin.

Heat a frying pan on medium heat with a drizzle of olive oil and cook your patties 3 minutes on one side, until cooked through.

Fry your eggs to your liking.

Slightly toast your muffin, pop baby spinach on the base followed by your turkey sausage, top with cheddar then your egg. Pop your lid top on and enjoy.
