Serves 2
1 tsp Smoked paprika
120g cooking chorizo diced
1 red onion finely chopped
1 red chilli finely chopped
1 clove of garlic grated or finely chopped
200ml white wine ( AND A GLUG FOR YOU)
1 tin of chopped tomatoes
Pinch of sweetener
Mussels 500g de bearded, cleaned and ensure any open or broken ones are discarded.
Put 1 tbsp oil in a large pan with a lid.
Add the chorizo and fry until nice and crisp, scoop out with a slotted spoon onto a plate.
Pop the onion, garlic, paprika and chilli to the pan, cook until softened over a low heat.
Turn the heat up and return the chorizo to the pan, add the wine, chopped tomatoes, a pinch of sweetener, plenty of pepper and a tiny bit of salt.
Gently simmer for 3minutes.
Pop your cleaned mussels in and stir to combine, cover with a lid and steam for 3-4 minutes, give the pan a gentle shake a couple of times
Check that the mussels have opened.
Divide between bowls and serve with a soda bread.
