Ingredients:
Handful olives
Handful capers
Clove of garlic
1 cod fillet
Roasted veggies
Cherry toms
Half can of tomatoes finely chopped
Anchovies
Method:
Bake cod with veg in oven at 180 degrees for 20 mins
Chop olives, anchovies & garlic
Fry garlic for 2 mins in spray oil
Add chopped anchovies & olives
Mix sauce and cherry toms
Add capers
Pour over cod when cooked
