The Health Fairy

Serves 2

1 pack of halloumi sliced

1 tbsp runny honey

2 tbsp harissa paste

Handful of little gem leaves

Handful of cherry tomatoes

2 wholewheat wraps

Pop a large non stick frying pan on medium heat, fry your halloumi for a couple of minutes either side. Drizzle in your honey & harissa and continue frying until it’s all nicely sticky and coloured.

Scatter your leaves & tomatoes over your plate, top with your halloumi and pop a wrap alongside.
