2 slices of whole grain toast
250g vine cherry tomatoes
400g mixed mushrooms
1 garlic clove grated
25g butter
Olive oil
Optional parsley to garnish
Preheat your oven to 180 degrees.
Pop your tomatoes in an oven tray, drizzle over a little olive oil and season with fresh ground pepper and salt.
Oven roast for 20 minutes.
Roughly chop your mushrooms into bite size pieces.
Melt your butter with 1 tbsp of olive oil in a frying pan, add your mushrooms and fry on a medium/high heat until nicely cooked (5 or 6 mins) Add your garlic for the final minute of cooking.
Top your toast with the tomatoes and mushrooms and a few sprigs of parsley
