The Health Fairy


Serves 2

400g turkey mince
3 tbsp hoisin sauce
2 tbsp soy sauce
2 tbsp rice wine vinegar
1 brown onion chopped
2 garlic cloves grated
Sesame oil
1Dessert spoon of grated ginger
225g tin of water chestnuts roughly chopped
Little gem lettuce
2 spring onions finely sliced

In a small bowl mix together the hoisin sauce, soy, vinegar and 2 tsp of sesame oil.
Add 1 tbsp of olive oil to a frying pan on a medium heat, add your onion and cook until soft, add the ginger and garlic and cook for 1 minute. Add your mince and fry for 5 minutes or so until almost cooked through.
Add your prepared sauce to the frying pan and cook for 2-3 minutes, add your chestnuts and cook for another minute or so until everything is thoroughly cooked through.
Separate your little gem leaves and pop a heaped tablespoon of your mixture into each one and arrange on a plate.

Sprinkle over your spring onions and enjoy
