The Health Fairy

Serves 1

1/2 chilli finely diced (keep few bits to garnish)

5 cherry tomatoes diced.
1 banana shallot diced

3 large eggs
1 ripe avocado

 2 slices sourdough bread  ( don’t make it too large fairies!)

Spray a frying pan with coconut oil  and cook the onions on a low/medium heat until starting to colour.
Add the diced tomatoes and chilli and cook for a couple of minutes.

Beat the eggs and put them in the pan.
Keep the eggs moving until scrambled to your liking . Toast your sourdough
Smash the avocado with a fork
Top one slice with your scrambled egg and one with smashed avocado.

Top with a sprinkling of chilli and enjoy.
