1 cup of oats
1 medium sweet potato
1/3 cup of apple sauce
1 egg white
1 scoop vanilla whey protein powder
1 tsp baking powder
1 tbsp cinnamon
- Pre-heat oven to 190 degrees before skinning and chopping sweet potato into small cubes – microwave for 5 minutes until cooked.
- Then, including the sweet potato, blend all ingredients except the blueberries in a food processor/bullet until smooth.
- Place mixture individually onto doughnut tray if you have one – if not, a regular cake tray will work. Bake for 10-15 minutes and allow to cool for 3 minutes before eating.
- Meanwhile, microwave blueverries for 30 seconds before mashing up into a puree and glazing each donut. These can be kept in the fridge.
