The measurements shown are for one serving, unless chosen otherwise. For best results cook in batches of six with the following measurements:

Ingredients:

3 bananas
1/4 cup or 75ml vegetable oil
1/2 cup or 100g brown sugar
1.5 cups or 225g plain flour
3 tsp baking powder
3 tsp cinnamon
1/4 cups or 50g dried fruit

Method:

Heat oven to 200 degrees C or 390 degrees F
Mash bananas, then mix well with oil and sugar
Add flour, baking powder and cinnamon, and then add dried fruit
Bake in an oiled loaf tin for 20 minutes
Allow to cool before slicing
