2 medium free range eggs
1 400g tin of chopped tomatoes
Handful of rocket
1/2 a ripe avocado
Preheat your oven to 180 degrees.
Pop a tbsp of tomatoes into your ramekins/dish. Dice your avocado and pop a few pieces on top. Sprinkle a few rocket leaves over. Spoon a pocket in the middle and pop in your eggs.
Pop some diced avocado, tomatoes and rocket around the edges.
Place in the oven for 20 minutes or so until the eggs are set to your liking.
Finish with a scattering of rocket and enjoy.
