1 sweet potato peeled and grated

Olive oil


2 rashers of bacon

3 eggs

1 large tomato cut in half.

6 mushrooms

Pop your grated potato in a bowl and season with fresh pepper, salt and a pinch of paprika, crack in an egg and thoroughly mix. Divide into 2

Heat a generous glug of olive oil on medium heat in a frying pan and once hot add your hash brown mix. . Cook for6 minutes on each side. Turn up to high and cook for a further 1 min on each side to really crisp them up.

While your hash browns are cooking pop your bacon, mushrooms and tomato halves under the grill.

Melt a little butter and olive oil in a frying pan and fry your eggs with a nice grind of black pepper.

Divide between 2 plates and enjoy
