Sweet Treat  Pecan pie

2 medium eggs

150g unsalted butter melted

140g soft brown sugar

1 tbsp plain flour

1 tbsp milk/almond/oat

1 tsp vanilla extract

130g chopped pecans

Handful of whole pecans


500g plain flour

350g butter

1 tbsp caster sugar

1 medium egg

125ml water

In a large bowl, mix your flour, butter, sugar and a pinch of salt. Mix together until crumbly. Add your egg and water a bit at a time until you get a nice pastry consistency.

Preheat your oven to 180 degrees.

In a bowl beat your eggs until nice and foamy, stir in the melted butter, brown sugar and flour. Add your milk, vanilla and pecans.

Roll out your pastry and line a 25cm tart tin, pour in your nut mixture.

Sprinkle over your whole pecans.

Bake for 10 minutes and then reduce heat to 130 degrees and bake for a further 45 minutes or until set.
